Le Brin is a farmhouse cheese traditionally produced in the
Rhone-Alps region of France that is made from cow’s milk with a washed rind. It is a milder and sweeter version of typical
French washed rind cheeses which are highly aromatic and fully flavored. It is made with a vegetarian rennet. The cheese is
produced in a hexagonal shape by the Guilloteau creamery. The end result is a creamy and spreadable paste with a reddish
orange edible rind.
