Colby Jack

Colby Jack is a classic hybrid of two American cheeses, Colby and Monterey Jack. It is a semi-firm cow milk cheese that is made from pasteurized milk and often formed in a cylindrical or half-moon shape. It is most commonly produced in Wisconsin, but also made in New York, California, Vermont and other cheese producing regions. The curds are knit together to show almost a marble like appearance.
