Monroe is a handmade washed rind cheese made by Emmi Roth that is named after the Wisconsin town that the Roth was founded in. It is a semi-soft, pasteurized cow milk cheese that is brine washed and aged in the same cellars as the Roth Grand Cru alpine cheese. It has a sticky and tan colored exterior, creamy and supple paste that is rich and buttery in flavor with a texture similar to cheesecake. Made in wheels that are approximately 1.5lbs, the cheese is hand washed and turned every day and aged for a minimum of 30 days.
