Red Rock cheese is an American original, made by Roelli Cheese in Shullsburg, Wisconsin. It is a unique cheese, as it is almost a hybrid of Cheddar and Blue Cheese. Made with Pasteurized cow’s milk and aged for at least 2 months, it is a cheddar made with a double dose of annatto giving it a very rich orange color and injected with blue veins. It has a creamy texture and mild flavor with a slight sharpness at the finish due to the blue cheese influence.
