This is a limited edition cheese produced by Emmi Roth in Monroe, Wisconsin. It is an unpasteurized cow milk cheese that is aged for a minimum of 6 months. Inspired by traditional Alpine-style cheeses, it has an earthy and robust flavor with a nutty and sweet finish that is reminiscent of butterscotch. It is semi hard in texture and has a strong presence of crystallization throughout its paste. The natural rind boasts a straw yellow color with the occasional reddish hue. The interior is ivory in color with a dense, pliant texture. This cheese has won numerous awards over the years from competitions such as the Worlds Cheese Awards, World Dairy Expo, American Cheese Society, and the Wisconsin State Fair.
